Yield: 18 servings
1 c butter 1 c whole wheat pastry flour
2 pk (3 oz each) cream cheese, so 1 c rolled oats
2 tb vanilla 1 ea jar strawberry preserves
Cream together butter and cream cheese. Blend in vanilla. Add flour and
stir in oats. Chill dough overnight.
Roll out dough on lightly floured board to 1/4-inch thickness. Cut with
2-inch round cutter. Place on ungreased cookie sheets. Make an
indentation on each cookie in its center with your thumb. Fill
indentation on each cookie with a teaspoon of strawberry preserves.
Bake at 350 degrees about 20 minutes or until golden brown.
